RECIPE: LOW HISTAMINE FRIED SIRLOIN

Ingredients:


  • 300 gr of Iberian pork tenderloin (from the butcher shop)

  • 1 sweet potato

  • 1 white onion

  • 3 tablespoons of honey

  • Olive oil

  • Salt

  • 2 tablespoons of vegetable milk (your favorite). Optional

  • Pepper* (if you tolerate it correctly). Optional



Preparation / Steps:


  1. Peel and cut the sweet potatoes into chunks. Boil them without salt or oil in a pot until they are tender. Drain them and let them warm.


  2. With a fork, mash them until you get a puree.


  3. Put the spices that feel good to you and mix again. And, if you want to adjust the texture and make it smoother, slowly add a couple of tablespoons of vegetable drink.


  4. Yes you can: the key is time! Cut the onion into slices and put them in a pan with oil


  5. Cook for 30-40 min over medium-low heat or until they are ready


  6. Stir occasionally and add water if necessary. You can also put a pinch of salt, to turn up the flavor.


  7. Salt (and pepper*) the tenderloin and brush it with honey. Heat the oil in a pan and fry the sirloin over low heat until golden brown. Remove and cut into pieces of 5cm (or three fingers)


  8. Place 3 tablespoons of the puree in the center of the plate.


  9. Add one of the sirloin pieces


  10. Top with a little of your caramelized onion
