The light, fluffy crumb that's infused with citrus and vanilla flavors and filled with candied fruit adds an extra boost to the heady flavors of the season. This gluten-free panettone recipe takes things up a notch by soaking raisins and candied fruit in rum before blending them for an even more uplifting effect. Perfect for a Christmas brunch. Also try the classic gluten-free German sweet lebkuchen, you will be surprised by its original flavor!

Ingredients:


  • 250 g Mix Bread

  • 5 g dry yeast powder or 10 g fresh yeast

  • 150 ml warm water

  • 2 tsp. xanthan gum

  • 80 g margarine

  • 100 g sugar

  • 3 eggs

  • 80 g candied fruit

  • 150 g raisins

  • 1 tbsp. of vanilla essence or 1 packet of vanilla sugar

  • unwaxed lemon peel

  • 4 tbsp. of rum



Preparation / Steps:


  1. Wash the raisins and let them soak for half an hour with a little rum and the candied fruit.

  2. Dissolve the yeast in 150 ml of warm water
