  1. Wash the potatoes, cut them into small cubes and leave them to soak for 10 minutes to remove the starch. Pat dry and place the cubes side by side on a baking sheet. Sprinkle with smoked paprika and drizzle with olive oil. Bake at 200°C for 40 minutes. Flip once after 20 minutes.
  2. Peel and chop the onion. Brown the onion in 3 tablespoons of olive oil with the bay leaf. Then add the tomato puree, sugar and chilli. Stir everything together, then add the crushed tomatoes and white wine. Reduce while stirring over medium heat, finally adding the mustard, tabasco, parsley, salt and pepper. Stay warm.
  3. Drain the potatoes, place them in a deep plate or in individual plates, cover with the hot sauce.
