RECIPE: CREAMY COCONUT WITH CANDIED PINEAPPLE

Ingredients:


  • 1 pineapple

  • 200 ml. Cream 35% MG

  • 150 ml. Coconut cream

  • 20 ml. white rum

  • Sweetener to taste (Stevia, Erythritol, Saccharin,...)

  • Ground cinnamon

  • Coconut oil

  • 50 gr. Cookie

  • Mint



Preparation / Steps:


  1. Clean the pineapple and core it. Cut into 1×1 cubes.

  2. In a pan, add a knob of butter to sauté the pineapple. When it browns and begins to sweat, add the white rum and sauté over high heat.

  3. Emulsify the cream and add the coconut cream together with the sweetener. It should be semi assembled. Transfer to a pastry sleeve and reserve in the cold.
